Ingredients

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, diced

Salt and pepper to taste

3 cloves garlic, minced

2 cups uncooked penne pasta

3 cups chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup frozen peas

¼ teaspoon red pepper flakes (optional)

Fresh parsley, chopped (for garnish)

Instructions

Sauté the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the diced chicken, season with salt and pepper, and cook until browned and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.

Sauté Garlic: In the same skillet, add the minced garlic and sauté for 1 minute until fragrant, being careful not to burn it.

Cook the Pasta: Add the uncooked penne pasta and chicken broth to the skillet. Bring to a boil, then reduce the heat to a simmer. Cover and cook for about 10-12 minutes, or until the pasta is al dente. Stir occasionally to prevent sticking.

Create the Sauce: Once the pasta is cooked, stir in the heavy cream and grated Parmesan cheese. Mix well until the cheese has melted and the sauce is creamy. If the sauce is too thick, add a little more chicken broth to reach your desired consistency.

Add Chicken and Peas: Stir in the cooked chicken and frozen peas. Allow to cook for another 2-3 minutes until the peas are heated through. If using, sprinkle in the red pepper flakes for a touch of heat.

Season and Serve: Taste and adjust seasoning with more salt and pepper if needed. Garnish with chopped parsley before serving.
