1 lb ground beef

1 can (15 oz) black beans, drained and rinsed

1 cup cooked brown rice or quinoa

1 cup corn (fresh, frozen, or canned)

1 medium onion, diced

2 cloves garlic, minced

1 packet taco seasoning (or homemade: 1 tsp chili powder, 1 tsp cumin, 1 tsp paprika, salt & pepper to taste)

1 cup diced tomatoes (fresh or canned)

1 cup shredded cheddar cheese

1 avocado, diced

Fresh cilantro, chopped (for garnish)

Sour cream or Greek yogurt, for serving

Lime wedges, for serving

Hot sauce (optional)

Instructions
 

Cook the Beef: In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat.

    Sauté Vegetables: Add the diced onion and garlic to the skillet with the beef. Cook until the onion is translucent, about 3 minutes.
