Ingredients

1 pound of boneless, skinless chicken breasts, cut into strips

1 cup of breadcrumbs (panko preferred for extra crunch)

1/2 cup of grated Parmesan cheese

1 teaspoon of garlic powder

1 teaspoon of onion powder

1 teaspoon of paprika

1/2 teaspoon of salt

1/2 teaspoon of black pepper

1 large egg

1 tablespoon of Dijon mustard

2 tablespoons of honey

1 tablespoon of apple cider vinegar

Cooking spray or olive oil for greasing

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly grease it with cooking spray or olive oil.

Prepare the Breading: In a shallow bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper. Mix well to incorporate all the spices.

Prepare the Chicken: In another bowl, beat the large egg. Add 1 tablespoon of Dijon mustard into the egg and whisk until combined. Dip each chicken strip into the egg mixture, allowing the excess to drip off.

Coat the Chicken: Next, place each egg-dipped chicken strip into the breadcrumb mixture, pressing gently to ensure a good coating. Make sure all sides are covered evenly.

Arrange on Baking Sheet: Lay the coated chicken tenders in a single layer on the prepared baking sheet, leaving space between each piece for even baking.

Bake the Chicken: Place the baking sheet in the preheated oven and bake for about 15-20 minutes, or until the chicken is cooked through and the coating is golden and crispy. The internal temperature of the chicken should reach 165°F (75°C).

Make the Honey Mustard Dip: While the chicken is baking, prepare the honey mustard sauce. In a small bowl, mix together 2 tablespoons of honey, the remaining 1 tablespoon of Dijon mustard, and 1 tablespoon of apple cider vinegar. Stir until smooth and well combined.

Serve: Once the chicken tenders are done baking, remove them from the oven and let them cool for a few minutes. Serve with the honey mustard dip on the side for a delightful touch.
