1 cup rolled oats

1/2 cup almond butter (or peanut butter)

1/4 cup honey (or maple syrup for a vegan option)

1/2 cup finely chopped dried apples

1/4 cup chopped walnuts (or your preferred nuts)

1 teaspoon ground cinnamon

1/4 teaspoon vanilla extract

Pinch of salt

Optional: 1/4 cup mini chocolate chips for added sweetness

Instructions
 

In a large mixing bowl, combine the rolled oats, almond butter, honey, chopped dried apples, chopped walnuts, ground cinnamon, vanilla extract, and a pinch of salt.

    Mix the ingredients together until well combined. If the mixture seems too sticky, add a little extra oats until the desired consistency is achieved.

      (Optional) If you like a bit of chocolate, fold in the mini chocolate chips at this stage.

        Using your hands or a cookie scoop, roll the mixture into small balls, about 1-inch in diameter, and place them on a parchment-lined baking sheet.

          Once you've rolled all the mixture into balls, refrigerate them for at least 30 minutes to help them firm up.

            Store the energy bites in an airtight container in the fridge for up to one week. They can also be frozen for longer storage!
