Ingredients

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

2 tablespoons Sriracha sauce

1 tablespoon honey or maple syrup (for a vegan option)

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon sea salt

1/4 teaspoon black pepper

1 tablespoon cornstarch (optional, for extra crunch)

Fresh parsley or cilantro, for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easier cleanup.

Prepare the Chickpeas: After draining and rinsing the chickpeas, dry them thoroughly by spreading them out on a clean kitchen towel or paper towels. Pat them dry for the best crunch.

Season the Chickpeas: In a large bowl, combine the chickpeas with olive oil, Sriracha sauce, honey (or maple syrup), garlic powder, smoked paprika, sea salt, black pepper, and cornstarch (if using). Toss well until all chickpeas are evenly coated.

Arrange on the Baking Sheet: Spread the seasoned chickpeas in a single layer on the prepared baking sheet. Make sure they aren't overcrowded to ensure they roast evenly.

Roast the Chickpeas: Bake in the preheated oven for about 25-30 minutes, shaking the pan halfway through, or until the chickpeas are golden brown and crispy. Keep an eye on them towards the end to prevent burning.

Cool and Garnish: Once roasted, remove the chickpeas from the oven and let them cool for a few minutes. Optional: Garnish with freshly chopped parsley or cilantro for a pop of color and flavor.

Serve: Enjoy your crunchy Sriracha roasted chickpeas as a snacking treat, salad topping, or a delightful addition to grain bowls!
