Crunchy Roasted Veggie Wraps

1 medium zucchini, sliced into thin rounds

1 medium bell pepper (red or yellow), sliced into strips

1 cup cherry tomatoes, halved

1 medium red onion, cut into wedges

1 cup corn kernels (fresh or frozen)

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

4 large whole wheat wraps or tortillas

1 cup hummus or tzatziki sauce (for spread)

Fresh arugula or spinach leaves (for added crunch)

Crumbled feta cheese (optional, for garnish)

Fresh herbs for garnish (like parsley or cilantro)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Veggies: In a large mixing bowl, combine the sliced zucchini, bell pepper, cherry tomatoes, red onion, and corn. Drizzle with olive oil and sprinkle with smoked paprika, garlic powder, onion powder, salt, and pepper. Toss until all the vegetables are well coated.

      Roast the Vegetables: Spread the seasoned veggies in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and slightly charred. Stir halfway through for even roasting.

        Prepare the Wraps: While the veggies are roasting, take your whole wheat wraps and spread a generous amount of hummus or tzatziki sauce over one side of each wrap.

          Assemble the Wraps: Once the veggies are done, allow them to cool slightly. Layer the crunchy roasted veggies over the hummus on each wrap, followed by a handful of fresh arugula or spinach leaves.
