Ingredients

1 lb (450g) chicken tenders

2 cups cornflakes, crushed

1 cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

Cooking spray or vegetable oil, for baking/frying

Optional: Fresh parsley, for garnish

Dipping sauce of your choice (Ranch, BBQ, Honey Mustard, etc.)

Instructions

Preheat the Oven: If baking, preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easier cleanup.

    Prepare the Dredging Stations:

      - In a shallow bowl, add the all-purpose flour, garlic powder, onion powder, smoked paprika, salt, and black pepper. Stir well to combine.

        - In a second shallow bowl, beat the eggs until smooth.

          - In a third shallow bowl, place the crushed cornflakes.

            Coat the Chicken Tenders:

              - Take each chicken tender and dip it into the flour mixture, ensuring it’s evenly coated. Shake off any excess flour.

                - Next, dip the floured chicken into the beaten eggs, allowing any excess to drip off.

                  - Finally, roll the chicken tender in the crushed cornflakes, pressing gently to adhere the flakes to the chicken.

                    Bake or Fry the Tenders:

                      - For Baking: Place the coated chicken tenders on the prepared baking sheet. Lightly spray the tops with cooking spray to promote golden crispiness. Bake for 20-25 minutes, or until the chicken is cooked through and the coating is golden brown.

                        - For Frying: In a large skillet, heat about 1/2 inch of vegetable oil over medium heat. Once hot, carefully place the chicken tenders in the oil, cooking for 3-4 minutes per side, or until golden brown and cooked through. Remove and let drain on paper towels.

Serve: Once cooked, transfer the chicken tenders to a serving plate. Garnish with fresh parsley if desired and serve with your choice of dipping sauce.
