Ingredients

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 large onion, diced

2 cloves garlic, minced

2 (14.5 oz) cans diced tomatoes (with their juices)

1 (15 oz) can black beans, rinsed and drained

1 (15 oz) can kidney beans, rinsed and drained

1 bell pepper (red or green), diced

2 cups low-sodium chicken broth

2 tbsp chili powder

1 tsp cumin

1 tsp paprika

1/2 tsp cayenne pepper (adjust to taste)

Salt and pepper, to taste

Fresh cilantro, for garnish

Sliced avocado, for topping

Lime wedges, for serving

Instructions

Prepare the Ingredients: Start by peeling and dicing the sweet potatoes into small cubes. Dice the onion and bell pepper, and mince the garlic.

Brown the Turkey: In a skillet over medium heat, brown the ground turkey until it's no longer pink, approximately 5-7 minutes. Break it apart with a spatula as it cooks.

Combine in Crockpot: Once the turkey is browned, transfer it to the crockpot. Add the diced sweet potatoes, onion, garlic, bell pepper, diced tomatoes (with juices), black beans, kidney beans, and chicken broth.

Season It Up: Sprinkle in the chili powder, cumin, paprika, cayenne pepper, and season with salt and pepper. Stir everything until well combined.

Cook: Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours. The sweet potatoes should be tender, and the flavors will meld beautifully.

Taste and Adjust: Once done, taste the chili and adjust the seasonings if necessary, adding more salt or spices as desired.

Serve: Ladle the chili into bowls and top with fresh cilantro, avocado slices, and a squeeze of lime juice.
