Crockpot Chili and Cheese Pasta

1 lb ground beef or turkey

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes (with juice)

1 can (8 oz) tomato sauce

2 tablespoons chili powder

1 teaspoon cumin

1 teaspoon paprika

½ teaspoon cayenne pepper (optional for heat)

Salt and pepper to taste

8 oz pasta (penne or elbow macaroni work well)

2 cups shredded cheddar cheese (plus extra for topping)

1 cup chicken or vegetable broth

Fresh cilantro or green onions for garnish (optional)

Instructions
 

Brown the Meat: In a skillet over medium heat, cook the ground beef or turkey until browned. Break it up into small pieces with a spatula. Drain excess fat if necessary.

    Sauté Aromatics: Add diced onion and minced garlic to the skillet with the meat. Sauté for about 3-4 minutes until the onion is translucent.

      Add to Crockpot: Transfer the cooked meat mixture to the crockpot. Stir in the kidney beans, black beans, diced tomatoes (with juice), tomato sauce, chili powder, cumin, paprika, cayenne pepper, salt, and pepper.

        Add Broth: Pour chicken or vegetable broth into the mixture and stir well to combine all ingredients.

          Cook on Low: Cover the crockpot and set it to cook on low for 6 hours or high for 3 hours. This allows the flavors to meld beautifully.

            Prepare Pasta: About 15 minutes before serving, cook your pasta as per package instructions in boiling salted water until al dente. Drain and set aside.

              Mix in Pasta and Cheese: Once the chili is cooked, stir in the drained pasta and 2 cups of shredded cheddar cheese into the crockpot. Mix thoroughly until the cheese is melted and everything is well combined.
