Crispy Zucchini & Feta Wraps

Ingredients
  

2 medium zucchinis, thinly sliced

1 cup feta cheese, crumbled

1/2 cup fresh spinach, chopped

1/4 cup fresh parsley, chopped

1/4 cup breadcrumbs (preferably panko for extra crunch)

1 large egg

2 tablespoon olive oil

1 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper to taste

4 large tortillas or wraps (whole wheat or spinach-flavored)

Optional: Tzatziki sauce or your favorite dip for serving

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare the Zucchini: Place the thinly sliced zucchini in a mixing bowl. Sprinkle with salt and let sit for about 10 minutes to draw out moisture. Pat dry with paper towels.

      Make the Filling: In a separate bowl, combine the crumbled feta cheese, chopped spinach, parsley, breadcrumbs, egg, garlic powder, paprika, and a pinch of salt and pepper. Mix until well combined.

        Assemble the Wraps: Lay out each tortilla on a flat surface. Place a generous amount of the zucchini-feta filling on one side of each tortilla. Roll the tortilla tightly, folding in the sides as you go to create a secure wrap.

          Coat with Olive Oil: Brush or drizzle olive oil on the outside of each wrap to ensure they crisp up nicely in the oven.

            Bake the Wraps: Place the wraps seam-side down on the prepared baking sheet. Bake in the preheated oven for about 15-20 minutes or until they're golden brown and crispy, turning halfway through for even cooking.

              Serve: Remove from the oven and let cool for a few minutes. Slice in half and serve warm with tzatziki sauce or your favorite dip.
