Crispy Sweet Potato Waffle Fries

2 large sweet potatoes

2 tablespoons olive oil

1 teaspoon cornstarch

1 teaspoon paprika

1 teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon salt

½ teaspoon black pepper

½ teaspoon cayenne pepper (optional, for heat)

Fresh herbs (like parsley or cilantro) for garnish

Dipping sauce of your choice (ranch, garlic aioli, or sriracha mayo)

Instructions
 

Prep the Sweet Potatoes: Wash and peel the sweet potatoes. Cut them into wedges and then use a waffle fry cutter or a crinkle cutter to create waffle fries. If you don’t have one of these tools, you can cut the sweet potatoes into thin slices and then cut them again to create the waffle shape.

    Soak the Waffle Fries: Place the cut sweet potato fries in a large bowl and cover them with cold water. Soak for at least 30 minutes to remove excess starch, which helps them become crispier.

      Drain and Dry: After soaking, drain the fries and spread them out on a clean kitchen towel or paper towels. Ensure they are dry as excess moisture can lead to soggy fries.

        Season the Fries: In a large mixing bowl, combine the olive oil, cornstarch, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper (if using). Add the dried sweet potato wedges into the bowl and toss well until they're evenly coated with the seasoning mixture.

          Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat for easy cleanup.

            Arrange and Bake: Spread the seasoned sweet potato waffle fries in a single layer on the prepared baking sheet, making sure they have enough space and aren’t touching too much (this helps them to crisp up).
