4 large russet potatoes

1/4 cup olive oil

2 teaspoons garlic powder

2 teaspoons onion powder

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional for heat)

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (optional, for topping)

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Potatoes: Wash and scrub the russet potatoes thoroughly. Cut each potato in half lengthwise, then cut each half into 4-6 wedges, depending on the desired thickness.

      Parboil the Wedges: In a large pot, bring salted water to a boil. Add the potato wedges and parboil for about 5-7 minutes until they’re just tender but not fully cooked. Drain the wedges and let them cool for a few minutes.

        Season the Wedges: In a large bowl, whisk together the olive oil, garlic powder, onion powder, smoked paprika, oregano, thyme, salt, black pepper, and cayenne pepper (if using). Add the parboiled potato wedges and toss well until they are evenly coated with the seasoning mixture.

          Arrange on Baking Sheet: Spread the seasoned potato wedges in a single layer on the prepared baking sheet, ensuring they are not overcrowded for maximum crispiness.

            Bake: Place the baking sheet in the preheated oven and bake for 25-30 minutes, turning the wedges halfway through cooking, until they are golden brown and crispy.
