1 ½ cups all-purpose flour

1 tablespoon granulated sugar

½ cup unsalted butter, chilled and diced

4-5 tablespoons ice water

3 medium lemons (zest and juice)

½ cup granulated sugar (for filling)

2 tablespoons cornstarch

1 teaspoon vanilla extract

1 large egg, beaten (for egg wash)

Powdered sugar for dusting (optional)

Fresh mint leaves for garnish (optional)

Instructions
 

Make the Dough:

              - Mix the lemon juice, lemon zest, granulated sugar, cornstarch, and vanilla extract in a medium bowl until well combined. Allow it to sit for 10 minutes for the flavors to meld.

                Roll Out the Dough:

                  - Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
