Ingredients

1 block (14 oz) firm tofu, drained and pressed

1/4 cup cornstarch

2 tablespoons vegetable oil (for frying)

1 cup broccoli florets

1 bell pepper (red or yellow), sliced

1 cup snap peas

3 cloves garlic, minced

1 tablespoon ginger, finely grated

1/4 cup honey (or maple syrup for vegan option)

1/4 cup soy sauce (low sodium)

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 teaspoon red pepper flakes (optional)

Cooked rice or quinoa (for serving)

Sesame seeds and chopped green onions (for garnish)

Instructions

Prepare the Tofu: Cut the pressed tofu into bite-sized cubes. In a mixing bowl, toss the tofu cubes with cornstarch until evenly coated. This will help achieve a crispy texture during frying.

Fry the Tofu: In a large non-stick skillet or wok, heat the vegetable oil over medium-high heat. Add the tofu cubes in a single layer, ensuring they are not overcrowded. Fry until golden and crisp on all sides, about 8-10 minutes. Remove the tofu from the skillet and set aside on a paper towel-lined plate to absorb excess oil.

Stir Fry the Vegetables: In the same skillet, add the broccoli florets, sliced bell pepper, and snap peas. Stir fry for about 3-4 minutes until the vegetables are tender-crisp. Add the minced garlic and grated ginger, stirring continuously for an additional 1-2 minutes until fragrant.

Make the Sauce: In a small bowl, whisk together the honey (or maple syrup), soy sauce, rice vinegar, sesame oil, and red pepper flakes (if using). Pour the sauce over the stir-fried vegetables, tossing to combine.

Combine Tofu and Sauce: Add the crispy tofu back to the skillet and gently toss everything together, allowing the tofu to absorb the flavors of the sauce. Cook for an additional 2-3 minutes, ensuring everything is heated through.

Serve: Serve the crispy honey garlic tofu stir fry over a bed of cooked rice or quinoa. Garnish with sesame seeds and chopped green onions for an added crunch and flavor.
