2 large flour tortillas

1 cup cooked chicken, shredded or diced

1/2 cup basil pesto (store-bought or homemade)

1 cup shredded mozzarella cheese

1/2 cup shredded Parmesan cheese

1 medium tomato, diced

1/4 cup fresh basil leaves, chopped (optional)

1 tablespoon olive oil

Salt and pepper to taste

Optional: sour cream or Greek yogurt for dipping

Prepare the Chicken: If you haven't already, cook your chicken. You can grill, bake, or sauté it with a bit of olive oil, salt, and pepper. Once cooked, shred or dice it into bite-sized pieces.

    Mix the Filling: In a bowl, combine the shredded chicken with the basil pesto. Stir well to coat the chicken evenly with the pesto. Add diced tomatoes and half of the mozzarella and Parmesan cheese. Mix until well incorporated.

      Preheat the Pan: Heat a non-stick skillet over medium heat and add the olive oil. You want a nice, crispy exterior, so ensure the oil is hot enough before adding the tortillas.

        Assemble the Quesadilla: Place one tortilla in the heated skillet. Spread the chicken and pesto mixture evenly over the tortilla, leaving a small border around the edges. Sprinkle the remaining mozzarella and Parmesan cheese on top. Place the second tortilla over the top, pressing down gently.

          Cook Until Crispy: Cook for about 3-4 minutes, or until the bottom tortilla is golden brown and crisp. Carefully flip the quesadilla using a large spatula and cook for another 3-4 minutes on the other side until it’s also golden and the cheese is melted.
