Crispy Chicken and Waffle Sliders with Maple Syrup

For the Chicken:

1 lb boneless, skinless chicken thighs

1 cup buttermilk

1 cup all-purpose flour

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

½ tsp cayenne pepper (optional for heat)

Salt and pepper to taste

Oil for frying

For the Waffles:

1 ½ cups all-purpose flour

1 tbsp baking powder

1 tbsp sugar

½ tsp salt

1 ¾ cups milk

1 large egg

½ cup melted butter

Cooking spray or additional butter for waffle iron

For Assembly:

Maple syrup (for drizzling)

Optional: sliced strawberries or blueberries for garnish

Marinate the Chicken: In a bowl, combine the buttermilk with a pinch of salt and pepper. Add the chicken thighs, ensuring they are well-coated. Cover and refrigerate for at least 1 hour (or overnight for best flavor).

    Prepare the Waffles: In a mixing bowl, whisk together the flour, baking powder, sugar, and salt. In another bowl, whisk the milk, egg, and melted butter until well combined. Pour the wet ingredients into the dry ingredients, mixing until just combined. Do not overmix; some lumps are fine.

      Cook the Waffles: Preheat your waffle iron and grease it with cooking spray or melted butter. Pour batter into the waffle iron, using the amount recommended by the manufacturer. Cook according to the manufacturer’s instructions, usually about 4-5 minutes, until golden brown and crispy. Remove and keep warm in a low oven. Repeat with remaining batter.

        Fry the Chicken: While the waffles are cooking, heat oil in a deep skillet or frying pan over medium-high heat. In a shallow dish, mix the flour, garlic powder, onion powder, paprika, cayenne pepper, salt, and pepper. Dredge the marinated chicken thighs in the seasoned flour, tapping off excess.

          Fry the Chicken: Once the oil is hot (about 350°F), carefully add the coated chicken pieces in batches, avoiding overcrowding. Fry for 5-7 minutes per side or until golden brown and fully cooked (internal temperature should reach 165°F). Drain on paper towels.

            Assemble the Sliders: Cut the waffles into quarters. Place one piece of waffle on a serving tray, top it with a piece of fried chicken, and then cap it with another waffle quarter. Drizzle generously with maple syrup.

              Serve: Arrange the sliders on a platter. Optionally, garnish with fresh strawberries or blueberries for color. Serve immediately while the chicken is crispy and the waffles are warm.
