12 oz (340g) pasta of your choice (fettuccine or penne works well)

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 large zucchini, diced

1 (14 oz) can crushed tomatoes

1 cup heavy cream

1 teaspoon dried basil

½ teaspoon dried oregano

Salt and pepper, to taste

¼ cup grated Parmesan cheese, plus more for serving

Fresh basil leaves, for garnish

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve ½ cup of the pasta cooking water, then drain and set aside.

    Sauté the Aromatics: In a large skillet over medium heat, heat the olive oil. Add the chopped onion and sauté for about 3-4 minutes until it becomes translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the Zucchini: Incorporate the diced zucchini into the skillet and cook for about 4-5 minutes, stirring frequently, until it softens and begins to brown.

        Make the Sauce: Pour in the crushed tomatoes, followed by the heavy cream. Stir to combine and bring to a simmer. Season with dried basil, oregano, salt, and pepper. Let it simmer for about 5 minutes, allowing the flavors to meld together.

          Combine Pasta and Sauce: Add the cooked pasta directly into the sauce, tossing to coat evenly. If the sauce is too thick, add some reserved pasta cooking water a little at a time until you reach your desired consistency.
