Creamy Tomato Tortellini Soup

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 can (28 oz) crushed tomatoes

4 cups vegetable broth

1 teaspoon dried basil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

9 oz cheese tortellini (fresh or frozen)

1 cup heavy cream

1/2 cup grated Parmesan cheese

2 cups fresh spinach

Fresh basil leaves, for garnish

Instructions
 

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until the onion becomes translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

    Add Tomatoes and Spices: Pour in the crushed tomatoes and vegetable broth, stirring well. Add dried basil, oregano, red pepper flakes (if using), along with salt and pepper. Bring the mixture to a simmer.

      Cook Tortellini: Add the tortellini to the simmering soup and cook according to package instructions, usually about 5–7 minutes, or until the tortellini are tender and heated through.

        Make it Creamy: Reduce the heat to low and stir in the heavy cream and grated Parmesan cheese. Allow it to gently heat through, ensuring not to bring it to a boil.

          Add Spinach: Once the soup is hot and creamy, fold in the fresh spinach. Let it wilt for about 2-3 minutes.
