12 oz (340g) spaghetti or your choice of pasta

2 tablespoons olive oil

4 cloves garlic, minced

1 can (14 oz) diced tomatoes, with juice

1 cup heavy cream

1 cup fresh spinach, roughly chopped

1 cup fresh basil leaves, chopped (plus extra for garnish)

1 teaspoon sugar (optional, to balance acidity)

Salt and pepper to taste

½ cup grated Parmesan cheese (plus more for serving)

Red pepper flakes (optional, for heat)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté the Garlic: In a large skillet over medium heat, heat olive oil. Add minced garlic and sauté for about 1 minute until fragrant but not browned.

      Add Tomatoes: Pour in the can of diced tomatoes with their juices. If desired, add a teaspoon of sugar to balance the acidity. Simmer for about 5-7 minutes, allowing the flavors to meld.

        Make it Creamy: Lower the heat and stir in the heavy cream. Cook for an additional 3-5 minutes until the sauce thickens slightly, stirring occasionally.

          Add Spinach and Basil: Gently fold in the chopped spinach and basil leaves. Cook until the spinach wilts, about 2-3 minutes. Season with salt, pepper, and red pepper flakes to taste.

            Combine Pasta and Sauce: Add the drained pasta to the skillet. Toss everything together, adding reserved pasta water a little at a time until the desired creaminess is achieved.

              Finish with Parmesan: Stir in the grated Parmesan cheese and mix well. Remove from heat and serve immediately, garnished with extra basil and Parmesan if desired.
