12 oz (340g) pasta (fettuccine or penne)

1 tbsp olive oil

3 cloves garlic, minced

1 can (14 oz) diced tomatoes, with juices

1 cup heavy cream

1 cup fresh basil leaves, chopped (plus extra for garnish)

1/2 tsp red pepper flakes (optional, for a bit of heat)

Salt and black pepper, to taste

1/2 cup grated Parmesan cheese

Fresh mozzarella balls, for topping (optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water before draining.

    Sauté Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.

      Add Tomatoes: Pour in the diced tomatoes with their juices, and stir to combine. Let the mixture simmer for about 5 minutes to reduce slightly.

        Make it Creamy: Lower the heat and stir in the heavy cream, mixing well. Allow the sauce to simmer for another 3-4 minutes until it thickens.

          Season Well: Add the red pepper flakes (if using), chopped basil, salt, and black pepper. Stir until combined. Taste and adjust seasoning as needed.

            Combine with Pasta: Add the drained pasta to the sauce, tossing well to coat. If the sauce is too thick, gradually add reserved pasta water until desired consistency is reached.

              Finish with Cheese: Stir in the grated Parmesan cheese until melted and creamy.

                Serve: Plate the pasta hot, garnishing with extra basil leaves and fresh mozzarella balls if desired. Serve immediately and enjoy!
