12 oz. pasta (fettuccine or penne works well)

1 tablespoon olive oil

3 cloves garlic, minced

1 can (14 oz.) crushed tomatoes

1 cup heavy cream

1 teaspoon sugar (to balance acidity)

Salt and pepper to taste

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1 cup fresh basil leaves, chopped (plus extra for garnish)

1 cup grated Parmesan cheese (plus extra for serving)

Red pepper flakes (optional, for heat)

Instructions
 

Boil the Pasta:

    - In a large pot, bring salted water to a rolling boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

      Sauté Garlic:

        - In the same pot (or a large skillet), heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant and lightly golden.

          Add Tomatoes:

            - Pour in the crushed tomatoes, followed by the sugar, salt, pepper, and dried Italian herbs. Stir well and let it simmer for about 5 minutes, allowing the flavors to meld.

              Make it Creamy:

                - Reduce the heat to low and slowly pour in the heavy cream while stirring. Let it simmer for an additional 2-3 minutes until the sauce thickens slightly.
