4 boneless, skinless chicken breasts

1 cup sun-dried tomatoes, julienned (packed in oil or dry)

1 cup heavy cream

1 cup chicken broth

1 cup fresh spinach, chopped

1 cup grated Parmesan cheese

2 cloves garlic, minced

1 small onion, finely chopped

2 tablespoons olive oil

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

Fresh basil leaves for garnish

Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. Set aside.

    Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and cook for about 6-7 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside on a plate.

      Sauté the Aromatics: In the same skillet, add the chopped onion and cook until translucent, about 3-4 minutes. Add the minced garlic and sauté for an additional 30 seconds, until fragrant.

        Deglaze the Pan: Pour in the chicken broth and scrape the bottom of the skillet to release any browned bits. Bring to a simmer.

          Create the Creamy Sauce: Lower the heat and stir in the heavy cream, sun-dried tomatoes, dried basil, and dried oregano. Cook for 2-3 minutes until the sauce begins to thicken.
