Creamy Roasted Tomato Goat Cheese Pasta

2 cups cherry tomatoes, halved

3 tablespoons olive oil

Salt and pepper, to taste

8 ounces pasta (spaghetti or penne works best)

1 cup goat cheese, crumbled

1/2 cup heavy cream

2 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

1/4 cup fresh basil leaves, chopped

1/4 cup grated Parmesan cheese

Lemon zest, for garnish

Roast the Tomatoes: Preheat your oven to 400°F (200°C). In a baking dish, toss the halved cherry tomatoes with 2 tablespoons of olive oil, salt, and pepper. Roast in the oven for 25-30 minutes, or until they are blistered and caramelized.

    Cook the Pasta: While the tomatoes are roasting, bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta.

      Prepare the Creamy Sauce: In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the minced garlic and red pepper flakes (if using) and sauté for about 1 minute until fragrant.

        Incorporate Goat Cheese: Lower the heat on the skillet and add the crumbled goat cheese and heavy cream. Stir until the cheese is melted and the mixture is creamy. If the sauce is too thick, gradually add some reserved pasta water until you reach your desired consistency.
