Creamy Roasted Carrot Soup

2 pounds fresh carrots, peeled and chopped into 1-inch pieces

1 medium onion, chopped

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon ground coriander

4 cups vegetable broth

1 cup coconut milk (or heavy cream for a richer flavor)

Salt and black pepper to taste

Fresh coriander or parsley for garnish

Juice of 1 lime (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Carrots: Spread the chopped carrots, onion, and garlic on a large baking sheet. Drizzle with olive oil and sprinkle with cumin, coriander, salt, and pepper. Toss to coat the vegetables evenly.

      Roast the Vegetables: Roast in the preheated oven for 25-30 minutes, or until the carrots are tender and starting to caramelize, tossing halfway through for even roasting.

        Blend the Soup: Once roasted, transfer the vegetable mixture to a large pot. Add the vegetable broth and bring to a simmer over medium heat. Allow to simmer for about 5 minutes to meld the flavors.

          Add Coconut Milk: Remove from heat and stir in the coconut milk. Using an immersion blender, blend the mixture until smooth. If you don’t have an immersion blender, carefully transfer the mixture in batches to a countertop blender and blend until creamy.

            Adjust Seasoning: Return the blended soup to low heat. Taste and adjust seasoning with additional salt, pepper, and lime juice if desired.

              Serve: Ladle soup into bowls and garnish with fresh coriander or parsley. Drizzle a little extra coconut milk on top for a lovely presentation.
