12 oz fettuccine pasta

2 tablespoons olive oil

2 salmon fillets (about 6 oz each)

Salt and black pepper, to taste

2 cloves garlic, minced

1 cup heavy cream

Zest of 1 lemon

Juice of 1 lemon

1/2 cup freshly grated Parmesan cheese

2 tablespoons fresh dill, chopped (plus extra for garnish)

Fresh spinach (optional, for added freshness)

Lemon wedges, for serving

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta and set aside.

    Cook the Salmon: In a skillet, heat the olive oil over medium-high heat. Season both sides of the salmon fillets with salt and pepper. Place the salmon skin-side down in the skillet and cook for about 4-5 minutes. Flip the salmon and cook for another 4-5 minutes, or until the internal temperature reaches 145°F (63°C) and the fish flakes easily with a fork. Remove the salmon from the skillet and let it rest.

      Make the Creamy Sauce: In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 30 seconds until fragrant. Pour in the heavy cream, stirring to combine, and bring to a gentle simmer.

        Add Lemon and Cheese: Stir in the lemon zest and lemon juice. Gradually add the Parmesan cheese, mixing until melted and the sauce is creamy and smooth. If the sauce is too thick, slowly incorporate some reserved pasta water until desired consistency is reached.

          Combine Everything: Flake the cooked salmon into large chunks and gently fold it into the creamy sauce along with the cooked fettuccine. If you're adding spinach, toss it in at this point until it wilts slightly.

            Finish with Dill: Stir in the fresh dill and adjust seasoning with more salt and pepper, if necessary.
