Creamy Lemon Dill Salmon

4 salmon fillets (6 oz each)

Salt and freshly ground black pepper, to taste

2 tablespoons olive oil

1 tablespoon butter

3 cloves garlic, minced

1 cup heavy cream

1 tablespoon Dijon mustard

Juice and zest of 1 large lemon

2 tablespoons fresh dill, chopped (or 1 tablespoon dried dill)

1 cup spinach leaves (fresh)

Lemon wedges, for serving

Fresh dill sprigs, for garnish

Instructions
 

Season the Salmon: Pat the salmon fillets dry with paper towels. Season both sides generously with salt and pepper.

    Sear the Salmon: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the salmon fillets skin-side down. Cook for about 4-5 minutes until the skin is crispy. Flip the salmon and cook for an additional 3-4 minutes. Remove from the skillet and set aside on a plate.

      Make the Sauce: In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic and sauté for about 1 minute until fragrant.

        Add Cream and Flavorings: Pour in the heavy cream, followed by the Dijon mustard, lemon juice, and lemon zest. Stir well to combine. Allow the sauce to simmer for 2-3 minutes, letting it thicken slightly.

          Incorporate Dill and Spinach: Add the chopped dill and fresh spinach to the skillet. Stir until the spinach is wilted and the sauce is evenly mixed. Season with additional salt and pepper to taste.
