Ingredients

12 oz penne pasta

2 cups fresh spinach, chopped

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

3 tablespoons olive oil

1 teaspoon crushed red pepper flakes (optional)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside, reserving ½ cup of pasta water.

Sauté Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes, until fragrant but not browned.

Add Spinach: Stir in the chopped spinach and cook until wilted, about 3-4 minutes.

Make the Cream Sauce: Lower the heat and pour in the heavy cream. Stir to combine with the spinach and garlic. Bring to a gentle simmer.

Incorporate Cheese: Gradually add the grated Parmesan cheese, stirring until melted and combined. If the sauce is too thick, you can add a bit of the reserved pasta water to reach your desired consistency.

Combine Pasta and Sauce: Add the drained penne to the skillet, tossing it in the creamy garlic sauce until evenly coated. Season with crushed red pepper flakes (if using), salt, and pepper to taste.

Serve: Remove from heat and transfer to serving plates. Garnish with fresh chopped parsley and extra Parmesan cheese, if desired.

Enjoy! This dish is best served immediately, garnished with a drizzle of olive oil and a sprinkle of extra red pepper flakes for an added kick.
