8 oz (225 g) spaghetti or fettuccine

2 tablespoons olive oil

3 cloves garlic, minced

8 oz (225 g) cremini or button mushrooms, sliced

1 teaspoon dried thyme (or 1 tablespoon fresh thyme leaves)

Salt and pepper, to taste

1 cup (240 ml) heavy cream

½ cup (50 g) grated Parmesan cheese

2 tablespoons fresh parsley, chopped (for garnish)

Optional: Red pepper flakes, for a kick

Boil the Pasta: In a large pot of salted boiling water, cook the spaghetti or fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Sauté the Mushrooms: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it. Then, add the sliced mushrooms and thyme, seasoning with salt and pepper. Cook for about 5-7 minutes, stirring occasionally, until the mushrooms have released their moisture and turned golden brown.

      Create the Cream Sauce: Lower the heat and pour in the heavy cream, stirring well to combine. Allow the mixture to simmer for about 2-3 minutes until slightly thickened. Stir in the grated Parmesan cheese until fully melted and incorporated. If the sauce is too thick, gradually add a little reserved pasta water until the desired creamy consistency is reached.

        Combine Pasta and Sauce: Add the cooked pasta to the skillet, tossing well to coat the noodles in the creamy mushroom sauce. Taste and adjust the seasoning if necessary, adding more salt, pepper, or red pepper flakes if desired.
