Creamy Garlic Chicken and Potato Bake

4 boneless, skinless chicken breasts

1 lb (450g) baby potatoes, halved

1 cup heavy cream

1 cup chicken broth

6 cloves garlic, minced

1 medium onion, diced

1 tsp dried thyme

1 tsp dried oregano

1 tsp paprika

Salt and pepper to taste

2 tbsp olive oil

1 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Chicken: Season the chicken breasts with salt, pepper, paprika, and half of the thyme and oregano.

      Sauté the Onion and Garlic: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute until fragrant.

        Add Cream and Broth: Pour in the heavy cream and chicken broth, stirring well to combine. Bring the mixture to a simmer, then add the remaining thyme and oregano. Taste and adjust seasoning if necessary.

          Combine Ingredients: In a large baking dish, arrange the halved baby potatoes at the bottom. Place the seasoned chicken breasts on top of the potatoes. Pour the creamy garlic sauce over the chicken and potatoes, ensuring everything is well coated.

            Add Cheese: Sprinkle the grated Parmesan cheese evenly over the top of the chicken and potatoes.
