12 oz (340g) linguine or fettuccine

1 lb (450g) boneless, skinless chicken breasts, diced

2 tablespoons olive oil

3 cloves garlic, minced

1 small onion, finely chopped

4 cups fresh spinach

1 cup cherry tomatoes, halved

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper, to taste

Red pepper flakes, for garnish (optional)

Fresh basil or parsley, for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the linguine according to package instructions until al dente. Drain and reserve 1 cup of pasta water.

    Sauté the Chicken: In a large skillet over medium-high heat, heat the olive oil. Add the diced chicken and season with salt and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Sauté Aromatics: In the same skillet, add the chopped onion and cook until translucent, about 3 minutes. Then, add the minced garlic and sauté for another minute until fragrant.

        Add Spinach and Tomatoes: Add the fresh spinach and cherry tomatoes to the skillet. Cook until the spinach has wilted and the tomatoes are slightly softened, about 3-4 minutes.
