Creamy Chicken and Spinach Pasta Bake

250g penne pasta

2 tablespoons olive oil

1 medium onion, diced

2 garlic cloves, minced

300g chicken breast, diced

200g fresh spinach, washed and roughly chopped

250ml heavy cream

100g cream cheese

150g grated mozzarella cheese

50g grated Parmesan cheese

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon red pepper flakes (optional)

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 180°C (350°F).

    Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

      Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute.

        Cook the Chicken: Add the diced chicken breast to the skillet. Season with salt, pepper, oregano, and red pepper flakes. Cook until the chicken is no longer pink, about 6-8 minutes.

          Add Spinach: Stir in the chopped spinach and cook until wilted, about 2-3 minutes. Remove the skillet from heat.

            Make the Sauce: In a mixing bowl, combine heavy cream and cream cheese. Whisk until smooth. Add the mixture to the skillet with chicken and spinach, stirring well to combine.

              Combine Pasta and Sauce: Add the cooked penne pasta to the skillet and toss until the pasta is fully coated with the creamy chicken and spinach sauce.

                Transfer to Baking Dish: Pour the pasta mixture into a greased 9x13 inch baking dish. Spread it evenly.

                  Top with Cheese: Sprinkle grated mozzarella and Parmesan cheese generously over the top of the pasta.

                    Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbling and golden.

                      Garnish and Serve: Remove from the oven and let it sit for a few minutes. Garnish with fresh basil leaves before serving.
