12 oz (340g) fettuccine or spaghetti

2 tablespoons olive oil

1 tablespoon unsalted butter

1 pound (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 medium onion, diced

3 cloves garlic, minced

8 oz (225g) cremini or button mushrooms, sliced

1 teaspoon dried thyme

1 cup (240ml) chicken broth

1 cup (240ml) heavy cream

1/2 cup (50g) grated Parmesan cheese

1 cup fresh spinach leaves

Fresh parsley, chopped for garnish

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain, reserving 1/2 cup of pasta water, and set aside.

    Sauté the Chicken: In a large skillet over medium-high heat, heat the olive oil and butter. Once hot, add the chicken pieces. Season with salt, black pepper, and garlic powder. Cook for about 6-8 minutes, stirring occasionally, until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set it aside.
