Ingredients

12 oz cheese tortellini (fresh or frozen)

1 lb boneless, skinless chicken breasts, cubed

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

2 cups fresh spinach

1/4 cup fresh parsley, chopped (for garnish)

Freshly cracked black pepper (for serving)

Instructions

Cook the Tortellini: In a large pot, bring salted water to a boil. Add the tortellini and cook according to package instructions until al dente. Drain and set aside.

Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Season the cubed chicken with salt, pepper, and Italian seasoning. Add the chicken to the skillet and cook for about 5-7 minutes, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Make the Alfredo Sauce: In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 1 minute until fragrant. Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese, continuing to mix until the sauce is smooth and creamy.

Combine Ingredients: Add the cooked chicken back to the skillet along with the drained tortellini. Gently toss to coat the tortellini and chicken with the Alfredo sauce. Add the fresh spinach and cook for an additional 2-3 minutes until the spinach wilts.

Serve: Remove from heat and garnish with fresh parsley and additional Parmesan cheese if desired. Serve hot with freshly cracked black pepper on top.
