Ingredients

8 oz fettuccine pasta

2 boneless, skinless chicken breasts, diced

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup baby spinach (optional, for added nutrition)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Red pepper flakes (optional, for a kick)

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente, about 8-10 minutes. Reserve ½ cup of pasta water, then drain and set aside.

Sauté the Chicken: In a large skillet, heat olive oil over medium heat. Add the diced chicken, season with salt and pepper, and sauté for about 5-7 minutes, or until the chicken is cooked through and lightly golden. Remove the chicken from the skillet and set aside.

Prepare the Alfredo Sauce: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Pour in the heavy cream, bring it to a gentle simmer, and cook for 2-3 minutes, stirring continuously.

Add Cheese and Chicken: Gradually whisk in the grated Parmesan cheese until melted and smooth. Return the cooked chicken to the skillet, and stir to combine. If the sauce is too thick, add a little reserved pasta water until the desired consistency is reached.

Combine with Pasta: Add the drained fettuccine into the skillet along with baby spinach (if using). Toss everything together gently, making sure the pasta is well-coated with the creamy sauce.

Serve: Season with additional salt, pepper, and red pepper flakes if desired. Garnish with freshly chopped parsley and serve immediately.
