Creamy Cajun Shrimp Chowder

1 lb large shrimp, peeled and deveined

4 slices of thick-cut bacon, chopped

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (red or green), chopped

2 medium potatoes, diced

4 cups chicken or seafood broth

1 cup heavy cream

1 tbsp Cajun seasoning (adjust to taste)

1 tsp smoked paprika

1 tbsp olive oil

Salt and pepper, to taste

2 green onions, chopped (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Bacon: In a large pot or Dutch oven, heat the olive oil over medium heat. Add chopped bacon and cook until crispy. Remove the bacon from the pot and set aside, leaving the drippings in the pot.

    Sauté the Vegetables: In the same pot, add diced onion and bell pepper to the bacon drippings. Sauté for about 5 minutes or until softened. Add minced garlic and cook for an additional minute until fragrant.

      Add Potatoes and Broth: Stir in the diced potatoes, Cajun seasoning, smoked paprika, and salt and pepper. Pour in the broth and bring the mixture to a boil.

        Simmer: Reduce the heat to a simmer and let the chowder cook for about 15-20 minutes, or until the potatoes are tender.

          Incorporate Shrimp and Cream: Once the potatoes are tender, stir in the heavy cream and add the shrimp. Continue to cook for another 5-7 minutes, or until the shrimp are pink and fully cooked.

            Final Touch: Stir in the crispy bacon, adjust seasoning with salt and pepper to taste, and remove the pot from heat.
