Creamy Broccoli Cheddar Pasta

8 oz pasta (your choice: penne, fusilli, or rotini)

2 cups fresh broccoli florets

1 tablespoon olive oil

3 cloves garlic, minced

1 cup heavy cream

1 ½ cups shredded sharp cheddar cheese

½ cup grated Parmesan cheese

1 teaspoon Dijon mustard

Salt and pepper to taste

½ teaspoon red pepper flakes (optional for a kick)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. During the last 3 minutes of cooking, add the broccoli florets to the pot. Drain the pasta and broccoli, setting them aside.

    Sauté Garlic: In the same pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant and lightly golden.

      Prepare the Cream Sauce: Lower the heat and pour in the heavy cream, stirring gently. Allow the cream to heat through for about 2 minutes, being careful not to boil it.

        Add Cheeses: Gradually stir in the sharp cheddar and Parmesan cheeses until fully melted and smooth. If the sauce is too thick, add a splash of pasta water to reach your desired consistency.
