12 oz pasta (fusilli or penne works well)

2 ripe avocados, peeled and pitted

1 cup Greek yogurt

1 packet (1 oz) ranch seasoning mix

1 clove garlic, minced

1 tablespoon lemon juice

¼ cup fresh cilantro, chopped

½ cup cherry tomatoes, halved

½ cup corn (canned, frozen, or fresh)

Salt and pepper to taste

Grated parmesan cheese (optional, for serving)

Crushed red pepper flakes (optional, for serving)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Drain and set aside, reserving about 1 cup of pasta water.
