2 ripe avocados

4 large eggs

1 tablespoon olive oil

1 tablespoon fresh lemon juice

Salt and pepper, to taste

1/4 teaspoon red pepper flakes (optional)

4 slices of whole grain or sourdough bread

Fresh herbs (cilantro, parsley, or chives), for garnish

Optional toppings: cherry tomatoes, radishes, or feta cheese

Instructions
 

Prepare the Avocado: Cut the avocados in half, remove the pit, and scoop the flesh into a mixing bowl. Add lemon juice, salt, and pepper. Mash the avocado with a fork until creamy but still slightly chunky. If you like a bit of heat, mix in red pepper flakes.

    Cook the Eggs: In a non-stick skillet over medium heat, add olive oil. Crack the eggs into the skillet, cooking until the whites are set but the yolks are still runny, about 4-5 minutes for sunny-side up eggs. For a cooked yolk, flip the eggs carefully and cook for another minute.
