For the Tomato Basil Soup:

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

2 cans (14.5 oz each) diced tomatoes, with juices

2 cups vegetable broth

1 teaspoon sugar

1 teaspoon dried basil (or 1/4 cup fresh basil, chopped)

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup heavy cream (optional for extra creaminess)

Fresh basil leaves for garnish

For the Grilled Cheese:

4 slices of your favorite bread (sourdough or whole grain works great)

4 slices of sharp cheddar cheese (or mix with mozzarella for a melty twist)

2 tablespoons butter

Instructions
 

Prepare the Soup:

    - In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5-7 minutes, or until it becomes translucent.

      - Stir in the minced garlic and cook for an additional minute, until fragrant.

        - Add the canned tomatoes (with juices), vegetable broth, sugar, dried basil, salt, and pepper. Bring the mixture to a gentle simmer.

          - Allow the soup to cook for about 20 minutes, stirring occasionally.

            - After 20 minutes, if you’d like a creamier soup, stir in the heavy cream and blend until smooth using an immersion blender or a countertop blender. Return to the pot and simmer for another 5 minutes.

              Make the Grilled Cheese:

                - While the soup simmers, heat a skillet over medium heat. Butter one side of each slice of bread.

                  - Place two slices of bread, buttered side down, in the hot skillet. Layer two slices of cheese on each piece of bread.

                    - Top with the remaining slices of bread, buttered side up. Cook until golden brown, about 3-4 minutes, then carefully flip and cook the other side until golden and the cheese is melted.

                      - Remove from the heat and let cool for a minute before cutting diagonally for a classic presentation.

                        Serve:

                          - Ladle the warm tomato basil soup into bowls, garnish with fresh basil leaves, and serve alongside the crispy grilled cheese sandwiches.
