Cold Tuna Pasta Salad Cups

8 oz (about 2 cups) fusilli or rotini pasta

1 can (15 oz) tuna packed in olive oil, drained and flaked

1 cup cherry tomatoes, halved

1/2 cup cucumber, diced

1/4 cup red onion, finely chopped

1/4 cup black olives, sliced

1/2 cup frozen peas, thawed

1/4 cup mayonnaise

2 tablespoons Greek yogurt

1 tablespoon Dijon mustard

1 tablespoon lemon juice

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

12 small lettuce or endive leaves (to serve)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fusilli (or rotini) pasta and cook according to package instructions until al dente. Drain the pasta and rinse it under cold water until completely cooled. Set aside.

    Prepare the Dressing: In a medium mixing bowl, whisk together the mayonnaise, Greek yogurt, Dijon mustard, lemon juice, salt, and pepper until smooth and creamy. Adjust seasoning to taste.

      Mix the Salad: In a large mixing bowl, combine the cooled pasta, flaked tuna, cherry tomatoes, cucumber, red onion, black olives, and thawed peas. Pour the dressing over the salad mixture and gently toss until everything is well coated.

        Chill: Cover the bowl with plastic wrap and refrigerate the pasta salad for at least 30 minutes to allow the flavors to meld together.

          Assemble the Cups: To serve, take a lettuce or endive leaf and spoon a generous amount of the chilled tuna pasta salad into it, creating individual cups. Repeat until all the salad is used.

            Garnish and Serve: Sprinkle fresh parsley over the top for garnish. Serve immediately as a refreshing appetizer or light lunch.
