Cold Chicken & Orzo Salad

Ingredients
  

2 cups cooked orzo pasta

2 cups cooked, shredded chicken breast (store-bought rotisserie works well)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup extra-virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon Dijon mustard

1 teaspoon dried oregano

Salt and pepper, to taste

Instructions
 

Cook the Orzo: Bring a large pot of salted water to a boil. Add the orzo and cook according to package instructions until al dente. Drain the orzo, and rinse under cold water to stop the cooking process. Set aside to cool.

    Prepare the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, dried oregano, salt, and pepper. Adjust seasoning to taste.

      Mix the Salad: In a large mixing bowl, combine the cooled orzo, shredded chicken, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, and parsley.

        Add the Dressing: Pour the dressing over the salad and gently toss until all ingredients are evenly coated.

          Chill and Serve: Cover the salad with plastic wrap or transfer to an airtight container and refrigerate for at least 30 minutes to let the flavors meld. Serve cold, garnished with extra parsley if desired.
