Classic Stuffed Bell Peppers

4 large bell peppers (any color)

1 pound ground beef (or ground turkey for a lighter option)

1 cup cooked rice (white or brown)

1 medium onion, finely chopped

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes (with juice)

1 teaspoon dried oregano

1 teaspoon dried basil

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded cheese (cheddar or mozzarella)

1 tablespoon olive oil

Fresh parsley or basil, chopped for garnishing (optional)

Instructions
 

Preheat the Oven: Set your oven to 375°F (190°C) to prepare for baking.

    Prepare the Peppers: Slice the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside of the peppers with olive oil and place them upright in a baking dish.

      Cook the Filling: In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent (about 3-4 minutes).

        Add the Meat: Increase the heat slightly, then add the ground beef (or turkey) to the skillet. Cook until browned, breaking it up with a spoon as it cooks. Drain excess fat if needed.

          Combine Ingredients: Once the meat is cooked, stir in the cooked rice, canned diced tomatoes (with juice), oregano, basil, smoked paprika, salt, and pepper. Mix well and let it simmer for 5-7 minutes to meld the flavors.

            Stuff the Peppers: Spoon the meat and rice mixture generously into each bell pepper, packing it down slightly. Leave a little space at the top as it will expand during baking.

              Top With Cheese: Sprinkle the shredded cheese on top of each stuffed pepper, covering generously.

                Bake the Peppers: Add about 1/4 cup of water to the bottom of the baking dish to create steam, then cover the dish with foil and bake in the preheated oven for 25-30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is bubbly and golden.

                  Garnish and Serve: Once done, remove from the oven and let cool for a few minutes. Garnish with chopped fresh parsley or basil before serving for an extra burst of flavor.
