2 cups jasmine rice (cooked and cooled)

1 lb shrimp, peeled and deveined

2 tablespoons vegetable oil (divided)

1 small onion, diced

2 cloves garlic, minced

1 cup mixed vegetables (peas, carrots, corn)

3 green onions, chopped

3 eggs, lightly beaten

4 tablespoons soy sauce (adjust to taste)

1 tablespoon oyster sauce (optional)

1 teaspoon sesame oil

Salt and pepper, to taste

Instructions
 

Prep the Rice: If using freshly cooked rice, spread it out on a baking sheet to cool to room temperature. This helps to prevent sogginess in the fried rice.

    Sauté the Shrimp: In a large wok or skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the shrimp and season with a pinch of salt and pepper. Cook for 2-3 minutes until the shrimp turns pink and opaque. Remove the shrimp from the pan and set aside.

      Cook the Aromatics: In the same pan, add the remaining tablespoon of oil. Add the diced onion and sauté for 2 minutes until translucent. Add the minced garlic and cook for an additional 30 seconds until fragrant.

        Add Vegetables: Stir in the mixed vegetables and cook for about 3-4 minutes until they're tender.

          Scramble the Eggs: Push the vegetables to one side of the pan. Pour the beaten eggs into the other side and scramble them until just set.

            Combine Ingredients: Add the cooled jasmine rice to the pan. Use a spatula to break up any clumps. Add the cooked shrimp back into the pan.

              Season the Rice: Pour soy sauce, oyster sauce (if using), and sesame oil over the rice mixture. Gently stir everything together, making sure all the rice is coated evenly. Taste and adjust seasoning with additional salt, pepper, or soy sauce as needed.

                Finish with Green Onions: Stir in the chopped green onions and sauté for an additional 1-2 minutes until everything is heated through.
