1 lb large shrimp, peeled and deveined

2 ripe avocados, halved, pitted, and diced

1 cup cherry tomatoes, halved

1/4 red onion, finely chopped

1/2 cup cucumber, diced

1/4 cup fresh cilantro, chopped

Juice of 2 limes

3 tablespoons olive oil

1 teaspoon garlic powder

Salt and pepper to taste

Optional: 1 jalapeño, finely chopped (for a spicy kick)

Instructions
 

Prepare the Shrimp: In a large pot, bring water to a boil. Add the shrimp and cook for 2-3 minutes, or until they turn pink and opaque. Drain and rinse under cold water to stop the cooking process. Set aside.

    Mix the Dressing: In a small bowl, whisk together the lime juice, olive oil, garlic powder, salt, and pepper. If you desire a spicier salad, add the finely chopped jalapeño to the dressing.

      Combine Ingredients: In a large mixing bowl, combine the cooked shrimp, diced avocados, cherry tomatoes, red onion, cucumber, and chopped cilantro. Gently toss to combine, being careful not to mash the avocados.

        Dress the Salad: Pour the lime dressing over the shrimp and avocado mixture. Gently toss again to ensure all ingredients are well coated with the dressing.
