Classic Shepherd’s Pie with Lamb

1 lb ground lamb

1 tbsp olive oil

1 onion, finely chopped

2 carrots, diced

2 cloves garlic, minced

1 cup frozen peas

2 tbsp tomato paste

1 tbsp Worcestershire sauce

1 tsp dried thyme

1 tsp dried rosemary

Salt and pepper to taste

4 cups mashed potatoes (prepared from about 2 lbs of peeled potatoes)

½ cup grated cheddar cheese (optional)

Fresh parsley for garnish

Prepare the Filling:

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and diced carrots. Sauté for about 5-7 minutes until the vegetables are tender. Stir in the minced garlic and cook for an additional minute until fragrant.

      Brown the Lamb:

        Increase the heat to medium-high and add the ground lamb to the skillet. Cook, breaking it up with a spatula, until browned (about 6-8 minutes). Drain any excess fat.

          Add Flavor:

            Stir in the tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Mix until well combined. Add the frozen peas and cook for another 2-3 minutes, then remove from heat and set aside.

              Prepare the Mashed Potatoes:

                If not already prepared, boil the peeled potatoes in salted water until tender (about 15-20 minutes). Drain and mash them with a bit of butter, milk, and seasoning to taste until smooth.

                  Assemble the Pie:

                    Preheat your oven to 400°F (200°C). In a baking dish (approximately 9x9 inches), spread the lamb mixture evenly across the bottom. Next, layer the mashed potatoes on top, spreading them evenly with a spatula. If desired, sprinkle grated cheddar cheese over the top for an extra cheesy crust.

                      Bake:

                        Place the baking dish in the preheated oven and bake for 25-30 minutes or until the top is golden brown and slightly crispy.
