Classic Meatloaf with Mashed Potatoes

1 ½ lbs ground beef (80/20 blend for juiciness)

½ cup breadcrumbs

½ cup milk

1 small onion, finely chopped

2 cloves garlic, minced

1 large egg, beaten

2 tbsp Worcestershire sauce

1 tbsp ketchup

1 tsp salt

½ tsp black pepper

1 tsp dried thyme

1 tsp dried oregano

½ cup ketchup (for topping)

1 tbsp brown sugar (optional, for topping)

For the Mashed Potatoes:

2 lbs russet potatoes, peeled and cut into chunks

½ cup unsalted butter

½ cup heavy cream (or milk)

Salt, to taste

Freshly ground black pepper, to taste

Chives or parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Meatloaf Mixture:

      - In a large mixing bowl, combine the ground beef, breadcrumbs, and milk. Let it sit for about 5 minutes to soak.

        - Add the chopped onion, minced garlic, beaten egg, Worcestershire sauce, ketchup, salt, pepper, thyme, and oregano. Mix just until combined; do not overmix as it will make the meatloaf tough.

          Shape the Meatloaf:

            - Transfer the mixture to a loaf pan or shape into a freeform loaf on a lined baking sheet. Smooth the top and sides for even cooking.

              Add the Topping:

                - In a small bowl, mix the ketchup and brown sugar (if using). Spread this mixture evenly over the top of the meatloaf.

                  Bake:

                    - Bake in the preheated oven for 1 hour or until the internal temperature reaches 160°F (70°C). Let rest for 10 minutes before slicing.

                      Prepare the Mashed Potatoes:

                        - While the meatloaf is baking, place the peeled and cut potatoes in a large pot of cold salted water. Bring to a boil and cook until fork-tender, about 15-20 minutes.

                          - Drain the potatoes and return them to the pot. Add the butter and heavy cream (or milk).

                            - Mash until smooth and creamy. Season with salt and pepper to taste. Cover to keep warm.
