To achieve the perfect sauté for your chicken fajitas, it's crucial to master the technique. Start by ensuring your skillet is hot enough before adding any ingredients. This step is essential because it allows the chicken and vegetables to sear rather than steam. A good rule of thumb is to preheat your skillet over medium-high heat for about 3-5 minutes. You can test if it’s ready by flicking a few drops of water onto the skillet; if they sizzle and evaporate immediately, you're good to go.

Ingredients

1 lb (450g) boneless, skinless chicken breasts, sliced into thin strips

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon paprika

1 teaspoon garlic powder

Salt and pepper, to taste

1 medium yellow onion, sliced

1 medium red bell pepper, sliced

1 medium green bell pepper, sliced

1 medium orange bell pepper, sliced

Juice of 1 lime

Tortillas (flour or corn, for serving)

Optional toppings: sour cream, guacamole, salsa, shredded cheese, fresh cilantro

Instructions

Marinate the Chicken: In a large bowl, combine sliced chicken with olive oil, chili powder, cumin, paprika, garlic powder, salt, and pepper. Mix well to ensure the chicken is coated evenly. Let it marinate for at least 30 minutes (or up to 2 hours in the refrigerator for more flavor).

Sauté the Peppers and Onions: Heat a large skillet or cast-iron pan over medium-high heat. Add a drizzle of olive oil and then toss in the sliced onions and colorful bell peppers. Sauté for about 5-7 minutes until they start to soften, stirring occasionally. Remove them from the skillet and set aside.

Cook the Chicken: In the same skillet, add a bit more olive oil if necessary, and add the marinated chicken strips in a single layer. Cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through and slightly caramelized.

Combine: Return sautéed peppers and onions to the skillet with the chicken. Add the lime juice and stir well to combine all the ingredients. Cook together for another 2-3 minutes until everything is heated through.

Warm the Tortillas: In a separate pan, warm the tortillas over low heat for about 30 seconds on each side until pliable. Alternatively, you can wrap them in foil and warm them in the oven.

Serve: Serve the sizzling chicken and pepper mixture on a platter with warm tortillas. Allow everyone to create their own fajitas and top them with their choice of sour cream, guacamole, salsa, shredded cheese, and fresh cilantro.
