Chicken Taco Casserole

3 cups cooked chicken, shredded (rotisserie chicken works great)

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 packet (1 oz) taco seasoning

1 cup salsa (mild or spicy, to your preference)

6 small corn tortillas, cut into strips

1 cup cheddar cheese, shredded

1 cup Monterey Jack cheese, shredded

1/2 cup sour cream

1/4 cup fresh cilantro, chopped (for garnish)

Sliced jalapeños (optional, for topping)

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C).

    Prepare the Chicken Mixture: In a large mixing bowl, combine the shredded chicken, black beans, corn, diced tomatoes (with their juices), taco seasoning, and salsa. Mix well until all ingredients are evenly coated with the salsa and seasoning.

      Layer the Casserole: In a greased 9x13 inch baking dish, spread half of the corn tortilla strips evenly across the bottom. Next, spoon half of the chicken mixture over the tortillas. Sprinkle half of the cheddar and Monterey Jack cheese on top of the chicken mixture.

        Repeat the Layers: Add another layer with the remaining tortilla strips, followed by the remaining chicken mixture, then finish with the remaining cheese sprinkled generously on top.

          Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

            Serve: Once baked, let the casserole cool for about 5-10 minutes. Drizzle the sour cream on top, garnish with fresh cilantro, and add sliced jalapeños if desired. Serve warm and enjoy!
