For the Chicken Skewers:

1 pound (450g) boneless, skinless chicken breast, cut into 1-inch cubes

2 tablespoons olive oil

2 tablespoons soy sauce

1 tablespoon honey

2 cloves garlic, minced

1 teaspoon ground ginger

1 teaspoon paprika

Salt and pepper to taste

6 wooden skewers, soaked in water for 30 minutes

For the Pineapple Salsa:

1 cup fresh pineapple, diced

½ red bell pepper, finely chopped

¼ red onion, finely chopped

1 jalapeño, seeded and minced (optional, adjust for spice)

2 tablespoons fresh cilantro, chopped

Juice of 1 lime

Marinate the Chicken: In a bowl, combine olive oil, soy sauce, honey, minced garlic, ground ginger, paprika, salt, and pepper. Add the cubed chicken breast and mix until well coated. Cover and let it marinate in the refrigerator for at least 30 minutes, preferably 1-2 hours for enhanced flavor.

    Prepare the Pineapple Salsa: In a separate bowl, combine diced pineapple, red bell pepper, red onion, jalapeño, and cilantro. Squeeze lime juice over the mixture and add salt to taste. Gently toss to combine. Allow the salsa to rest for at least 15 minutes to let the flavors meld.

      Skewer the Chicken: Preheat your grill or grill pan over medium-high heat. Thread the marinated chicken cubes onto the soaked skewers, leaving a little space between each piece for even cooking.

        Grill the Chicken Skewers: Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).
