1 pound ground chicken

1 tablespoon olive oil

1 cup diced bell peppers (red, green, or yellow)

1/2 cup chopped green onions (scallions)

2 cloves garlic, minced

1 tablespoon minced fresh ginger

1/4 cup soy sauce (or tamari for a gluten-free option)

2 tablespoons honey or agave syrup

Juice and zest of 1 lime

1 teaspoon sesame oil

1/4 teaspoon red pepper flakes (adjust for heat preference)

12-15 large butter lettuce or iceberg lettuce leaves

Optional toppings: chopped peanuts, shredded carrots, cilantro, lime wedges

Instructions
 

Heat the Pan: In a large skillet over medium heat, add the olive oil and allow it to warm up for about a minute.

    Cook the Chicken: Add the ground chicken to the skillet and cook for 5-7 minutes, breaking it apart with a spatula until it is browned and cooked through.

      Add Aromatics: Stir in the diced bell peppers, minced garlic, and ginger. Sauté for another 2-3 minutes until the bell peppers are slightly softened.

        Make the Sauce: In a small bowl, whisk together the soy sauce, honey, lime juice, lime zest, sesame oil, and red pepper flakes. Pour this mixture over the cooked chicken and vegetables in the skillet.

          Simmer: Cook everything together for an additional 3-4 minutes, allowing the sauce to thicken slightly and coat the chicken mixture.

            Prepare the Lettuce Wraps: While the mixture is simmering, wash and dry the lettuce leaves. Choose the largest, intact leaves for wrapping.

              Assemble: Remove the skillet from heat. Scoop about 2-3 tablespoons of the chicken mixture onto each lettuce leaf. Top with your choice of chopped peanuts, shredded carrots, and cilantro if desired.
